These 10 liter and larger wine kegs and barrels are also made from Central European white oak, which staves have been left drying for 18-24 months. This oak improves a red wine's structure, typically adds some spice and occassionally sweet vanillin taste. Additionally, white wines add a nutty,buttery flavour. Typically, 50% of the tannins are extracted during the first year and 25% in the following year. All tannins will be exhausted within four or five years
